The Bikini Cocktail Serves 10 guests To make the Clementine Cordial (makes 750ml) 300ml fresh clementine juice 200ml newly squeezed lemon juice 500g granulated sugar Ingredients for the Premix (produces 850ml, serving 10) 400ml decent vodka100ml dry gin150ml peach liqueur200ml citrus syrup (from the recipe above)Whole cranberries, for garnishMandarin essential oil, to finish Instructions To prepare the Cordial: Put all the ingredients into a pan, bring to a light boil, stirring to dissolve. Then, take off the stove and let it to cool down completely. Transfer to a clean bottle, cap it and refrigerate it in the refrigerator, it will last for about one month. Preparing the Cocktail Base: Mix the specified spirits and syrup in a large bottle, leave to sit for an hour, then filter it preferably using a fine cloth, making it completely strained. When ready to serve: Pour 85ml of your premix into your stirring glass filled with ice, gently stirring gently for a minute to cool it down. Filter to a cold coupe glass or equivalent, top with the cranberries adding the final touch with a quick spritz of the essential oil above the glass.
